The best breakfast sandwich you’ll ever make!

I’ve been on the mission to find the best breakfast sandwich combination. Right now, this bacon, egg, avocado sandwich on fresh sourdough bread is at the top of my list. Not only is is easy to make and delicious, it also has everything you need to start your day off right – proteins, healthy fats, and carbs!

Things that make the best breakfast sandwich – things to consider

There are a lot of ingredients that make the best breakfast sandwich, but it’s important to make sure they all match with each other. I started getting adventurous with my sandwich making at the beginning of my second trimester during my pregnancy. Sour kraut sounded so good on everything, and it does actually make a great breakfast sandwich topping, but only with certain food combinations. So, point number one is to pick foods that complement each other.

Another thing to think of is the texture of your sandwich. I always like a little creamy something on mine. Here we’re using avocado but I also love things like cream cheese and hummus!

Consider the type of bread you’re using. Bread can make or break a good sandwich. So far, I haven’t found anything that beats a crispy, golden toasted sourdough. Choose your bread wisely.

How to construct the best breakfast sandwich

Cut your sourdough bread into the shape you want for your sandwich and toast it. The bread that I used was a little more long than round and it wouldn’t fit in the toaster. No problem, spread butter on each side and pan fry it until it reaches your desired crispiness.

While the bread is toasting, mix your eggs and herbs/spices in a small bowl. I used fresh parsley, basil, and oregano with some salt and pepper. Mix like you would for scrambled eggs.

(If you haven’t already, make your bacon while you get everything else ready for the sandwich.)

Pour your egg and herb mixture into a buttered pan and let it cover the pan like you are making an omelet. Once it gets almost all the way cooked through, sprinkle cheese on the top to let it melt into the eggs. By adding the cheese when they are almost cooked, you avoid burning the bottoms of the eggs since the eggs will finish about the same time the cheese has a good melt.

While your eggs are cooking, cut and smash your avocado and then spread it onto your toasted bread. Sprinkle with salt and pepper if desired.

Once your eggs and bacon are done, lay the bacon on the avocado toast, then fold the eggs into the shape of your bread.

Open bacon, egg, cheese, and avocado sandwich.

Top with some spinach to add those extra greens in your meal and enjoy the best breakfast sandwich you’ve ever made!

Ingredients

  • Sourdough bread

  • 2 Eggs

  • 2-3 Slices of bacon

  • Half an avocado

  • Salt

  • Pepper

  • Herbs of choice (Parsley, basil, and oregano were great!)

  • Butter

  • Spinach

Directions

  • Cut your bread into the desired shape. If it can fit in the toaster, toast it. If it can’t, spread some butter on each side of the bread and pan fry it.
  • If you haven’t already made bacon, throw you bacon in the oven at 400F until it is your desired crispiness.
  • While the bacon is cooking and the bread is toasting, mix 2 eggs and the herbs, salt, and pepper in a small bowl. When ready, add the egg mixture to the pan and spread it out as if you’re making an omelet.
  • When the eggs are almost all the way cooked sprinkle shredded cheese on top.
  • While the eggs are finishing, cut an avocado in half and smash half of it with a fork. Spread this onto one or both slices of toast.
  • When the eggs and bacon are done it is time to assemble the sandwich! Lay 2 or 3 slices of bacon on the avocado-ed toast, fold your eggs into the shape of your bread and place on top of the bacon, top with spinach and the other slice of toast.

Notes

  • Consider adding a spoonful of cottage cheese to your eggs for some more protein and creaminess!
